Crispy chicken nuggets

Noel’s parents and little brother came up to Gainesville to visit this past weekend. We decided we’d cook for them when they got it. We made baked ziti for us, but figured her little brother might want something different. So I cooked up some chicken nuggets and was pleasantly surprised by just how good they were.

I decided to give them another go.

Ingredients for two

  • 1/2 lbs. of chicken breast
  • Adobo
  • Paprika
  • Seasoned Salt
  • 2/3 cups all-purpose flour
  • 1/3 cup breading
  • Cooking oil
  • Egg
  • 1/2 lime

Tools & cookware

  • Large pan or [preferably] a cast-iron skillet with a cover
  • Stove
  • 2 small bowls
  • Whisk
  • Tongs

Instructions

  1. Cut the chicken breast into thin squares or rectangles, and season it with adobo and paprika. Squeeze the 1/2 lime on the chicken.
  2. Crack the egg, pour it into a bowl and whisk it until completely yellow.
  3. Pour the 2/3 cups of flower and 1/3 breading into a bowl, and mix it together.
  4. Lightly bread each side of the chicken. Dip the chicken in the egg, and bread each side again and place aside on a plate. Pour seasoning salt on each side of the chicken.
  5. In a skillet, heat about a 1/4 inch of oil on medium heat.
  6. When the oil is hot (you’ll know if you drop a pinch of water or breading into the oil and it sizzles) add the chicken to the skillet with your tongs and cover for five minutes.
  7. Uncover the chicken, flip each one and fry for another 3 minutes. Continue to flip the chicken until golden brown.
  8. Remove the chicken nuggets and allow them to cool and drain of excess oil and grease on a plate with a paper towel.
  9. Serve with a french fries and some ketchup.
